Can you prevent vampirism. Or any other shrine. You either have to drink a cure disease potion or eat hawk feathers. You can also pray at any shrine. You can use cure disease potions any time before actually turning into a vampire. You can use resist disease gear, or becoming a werewolf gives you 100% disease resist.
Just to warn you of a glitch I came across - when you return the filled soul gem to him, and he tells you to meet him at the alter at dawn, wait for him outside his house until he leaves for the alter (it'll be some time between 3am and 7am) in order to trigger him going to the alter.
